More specifically, how exactly does Doopliss's copying/name-taking work? Does the victim really lose the ability to pronounce their own name and the letter P? Why does Doopliss behave completely out-of-character as Mario, but very in-character as Zip Toad or Frankly?

I think he just steals their name to hide his real one. It's nothing physical, just what he likes to do.

About the whole copying thing, he's a Duplighost. And (This is my thinking) it's possible that Duplighosts can rearrange their own atomsto resemble another person. Make sense?

But when Mario talks to Vivian after his name was stolen, her reaction is as if he is physically unable to pronounce his name. I don't think he just didn't tell her because he believe she's still one of the bad guys.

Actually, I think her being affiliated with the other side is exactly why Mario didn't tell her. Once she learns it's Mario, she ditches him. By not telling her his name, he was able to get her help. It's taking advantage of a bad situation.

So you basically think Mario lied? As far as I know, the only times Mario does immoral things like (trying to) lie or cheat is when the player has to choose responses for him, but lying out of his own accord? That's a bit harsh.

Now, it's still questionable whether the letter P part has actually happened or is just an anti-cheat measure by Nintendo so you can't guess right before backtracking 4 times. Darn that backtracking.

He did the same thing in M&L3, where he faked to be sick so that he'd be able to see Dr Toadley.

OK, yes, but that strikes me as some sort of white lie, first, the assistant obviously was incompetent or else she would have let them through, and second, there were no other patients with a higher priority in the line. This is much less severe than not telling your enemy who you are in order to exploit them.
Also, there's the thing with Luigi dressing up as Peach to save people, which is at least heroic. What I mean is Mario lying about not being able to say his name would not be... good. In any way.
Addendum: If we assume Mario lied, we're breaking his good image just because we refuse to believe Doopliss can actually take away someone's name, but there is nothing in the game to disprove that his magic is capable of doing that. So why make Mario into a villain just because we're doubting Doopliss's power? This seems like too much assumptions to me.

I don't say that Doopliss didn't took his name, only that Mario may have still be able to say his own name but he didn't wanted to tell it to Vivian because she's of the villains' side, and Mario doesn't know she's nice actually.

Mario never lied, actually. He told the truth, actually. If someone steals your friends, your appearance, your life, and everything else, then the name kind of goes along with that. Mario could have said that he once was Mario, but why would he want to, if it meant enlisting Vivian's help?

Ha, so I guess the prevalent opinion in here is that Doopliss does not have the power to actually physically prevent Mario from saying his own name, which I kind of took for granted. Well, it's nice to see another perspective, too!

He simply didn't told Vivian he was Mario because she wouldn't help him then, or even attack him (or at least that's what Mario thought, considering the only thing he knew about her was that she was on the villains' side).
