But being athletic and being super-human are extremely different from one another. Yes, Princess Peach can super-shoot a Tennis Ball, but Mario fights through legions of monsters, jumps like professional free-runner, and can travels across the nation regularly to rescue its monarch from a demon King. See the difference?

I think all that just means that Mario is more athletic, although Peach dose do her share of fighting legions of monsters, traveling across the land, and saving stuff. Also, when she jumps, she can literally glide through the air, with no power up! Although, that might just be because of her dress.
We should also take into account the apparent difference in physics in the MW.

I tend to think that her superhuman powers go into her magical abilities.
After all, she can completely revive a fallen party member without the use of a Pick-Me-Up. She's able to send her wishes of peace to the stars in order to power them up against the Star Rod. She can even freakin' levitate Bowser and throw him out of the castle all the way to Dimble Wood.
And yet she can't do much damage to an enemy with a frying pan...

'Cause I think what she said was that Peach's body was just unfamiliar to her, and then turned into her true form.

It is in the French version. Which is translated from Japanese but is the American one data-wise. The Shadow Queen exactly says that: "this body lacks exercise, but I'll get used to it". Also note how the thunder attack doesn't require the Shadow Queen's true form to appear, thus it may be from Peach's power.

Remember that the Shadow Queen could do a small variety of attacks when in her Peach form, so I'm tending to think that she can't be at full power unless in her "Invincible" form.

Peach has power it just hasn't been trained. It is sort of like Luke in the middle of Episode 5 when he is on Dagobah with Yoda.
