Well he "Invites" her to the Creation of his Galaxy, so we could assume that he took her and the Grand Star to the Center of the Universe, then used said Star to form an Artificial Sun, which he proceeded to build his Galaxy around!

His "galaxy" wasn't made of only the "big star" though. There's also the planets orbiting it (you know, the ice planet, the sand planet...).

Its construction couldn't start without at least one Grand Star though. That's the only energy Bowser is counting on, and the loss of the Grand Star destroyed the galaxy.

It's weird how Bowser doesn't seem to be doing anything productive in all of his levels in SMG games. He just sits around on his throne until Mario comes, lets himself be trounced, and teleports away saying "my plan has progressed too far!" The actual details of the plan are never revealed, though. Build a level in each world? That's actually constructive, and that's the only thing he accomplishes with the Grand Stars - basically, giving us more content to play through. Thanks, Bowser!
(Indeed, the only time some villain actually really destroys something in a Mario game would be Bleck and Sammer's Kingdom.)

Presumably, he just gets those working under him to do the work in Galaxy building while he torments Mario as his arch enemy. Think about it, when's the last time in history you recalled a country's leader being the one who did all the physical work? Maybe a bunch of Hammer Bros and Magikoopas are off building based on Bowser's plans, and Bowser Jr is making robots while Bowser sits on a throne all day.

Justely. To make that sun he needed a Grand Star. If he started the construction of that galaxy before kidnapping Peach, he couldn't have used the Grand Star in Peach's Castle.

Yes, but I guess the lack of destructivity in Bowser's plans is tied to the fact that no matter how long you play, nothing happens. No new Galaxy Plant gets built, Mushroom World doesn't get attacked, etc. Of course, it's inherent in most games (modelling such things would require either an unseen time limit which is unfair, or a visible time limit that makes it frustrating). Really, the only game to have any actual, real-life-bad-situation-resembling urgency to it is Majora's Mask.
This is a reason I like the Game Over screens from Banjo-Kazooie and DK64, they actually show what happens if the bad guys win, that they mean business.

Bowser stole all of the Grand Stars so he could have taken Peah's Castle with any/all of Them! Or the UFO at the beginning of the Game is not powered by the Stars...

He probably did attack the Observatory first, yes. I can't imagine him taking down Rosalina and her defenses in the short time it took Mario to get the first Grand Star and get to the Observatory. And if all Grand Stars are supposed to be in the Observatory and one already has a plant built on it, then it's too obvious anyway.

It isn't like the Comet Observatory has any defences besides the fact that it is invincible when it is moving. I think that Rosalina must have not been moving and extremely close to the ME when Bowser attacked it. They tried to get away but ended up losing their power and getting stuck right where Mario found the Comet Observatory

Actuallty, Bowser didn't really attacked it. Rosalina says a strange energy took away the Power Stars and thus the Observatory was paralyzed.

Well, a strange energy that harms you is an attack in my book. Not a physical one, but an attack. Err... the Observatory has no defenses? I thought Rosalina was a powerful magician and stuff. Especially against some "strange energy", I imagine she must have struggled, or do you think Bowser took her by surprise?

Well considering that the Observatory has no weapons AND Bowser stole all of their power with the "strange" energy, I don't think there was much that they could do.

Let's compare this energy to magnetism, and the Power Stars to... err... metal stuff. Even if Rosalina tried to escape, the Power Stars would've still been in Bowser's hands anyway.

Still, it's strange how Rosalina, who is supposed to be watching over the Universe, can lose so quickly to a giant turtle with a star magnet.

She's not a Goddess! She is a Human, and so far the only Powers she has demonstrated are Limited Flight, and the ability to make a Bubble to protect herself! Kamek could probably over power her! When she says that she watches over the Cosmos, I assume she means finding Lost Luma's and assuring that they reach Adulthood!
