The language spoken (in audio, not text) by most of the main Mario characters is English in all versions of the games. Even Bowser speaks it when talking to his son in Mario Sunshine. The Mushroom Kingdom and the Koopa tribe might have a shared language.
I guess yoshis have their own language even though a lot of them can converse with Mario and his friends too. It seems like most yoshis are bilingual.
As for the other languages, I don't really remember much about them.
