They just get extensive training with hammers that come from hammerspace

Eh, I still prefer my colors theory. Maybe they don't HAVE to choose that type, but they have a natural (or possibly genetically altered) affinity for their types, enough so that Mario never actually sees one of these different-weapon ones.
