Birdos have as many colours as Yoshis, but they're not as vibrant. I've only seen green red and pink.

So, is our conclusion that Birdos are just another kind of dinosaur, and that there is a pink Birdo that has fought Mario in the past but now peacefully participates in sports events?

I think That may be a trait confingned to Isle Delphino. We've seen other yoshi eat fruit without changing color.

The fruit from isle delfino is what causes the yoshis to change color, remember that the yoshis who eat the fruit vanish in water just like the fruit.
