Oh, I remember. In Paper Mario there were Koopas decked out in knights' armor with pointed helmets.

There's the Koopatrol from the Paper Mario series and the Beanbean Royal Guard from M&L:SS. I've never seen a toad in armor, though. The only thing relative to a Mushroom Military are the guards from PM, but even then, the only things they had were spears and cloaks. Although granted, if you look at their feet sticking out from under the cloaks, they're a dark grayish color, possibly hinting at metal boots which would in turn lead to the possibility of a full suit of armor. Just a thought, though.

Maybe all the metal went into buildings in Mushroom City etc. instead of guard protection.

Yeah, the Mushroom Kingdom seems to be peace-loving for the most part, so I'd say the military doesn't receive a lot of funding.

yeah i dont see alot of weapons or armor in the mushroom kingdom yeah theyve got nothing but koopas, hammer bros, footballers, bowser, goombas, koopa paratroopas, para goombas, nimbus people, baby bowser, king gommba, wario, waluigi, no big deal.

Well, all of this old medieval stuff is left over. I can't see Mushroom City springing up in a matter of years, so I think that it was already to at least electricity. It's just that the people left the castles standing just because they wanted to. Mario and Luigi sure helped bring more tech, but I'm pretty sure the humans already there and the mushroom people themselves could have created it without the Marios' help.

For the people who talked about knights in the series, they do exist. Other than the Koopatrols you've also got the seventh boss from Wario Blast and the mini boss in the last level of Syrup Castle in the first Wario Land game, as well as maybe the knight enemies in Master of Disguise.
But technology wise? Well that... varies. The Toads seem fairly medieval as far as that goes, although areas like Mushroom City and Twilight City seem really modern and almost real world current technology. Bowser's army seems heavily futuristic now, with the giant robots, airship fleets and galaxy generators in the Super Mario Galaxy sub series. The Kremlings seem fairly modern too, with the factories in the Donkey Kong Country series, and the areas of Wario Land range from really, really old fashioned (some in the first few games) to modern (Wario Land 2's city and factory levels) to outright technology obsessed (Glittertown/Neon City, maybe Wonky Circus in Wario World). Then there's Diamond City, which is just... culturally confusing, and Crescent Moon Village which defies all means of dating it to a certain time period (is it Salem era, Victorian, 1960s style or modern?)

I don't think the Mushroom Kingdom is Technologically Inferior, most places just prefer Old-Style Architecture. I mean, there is a Road System in the Mushroom City-District. And they have Private Jets, Sports Stadiums, Sattelite Television, EMail(Via that SP-thing from PM:TTYD). And they have Warp-Pipes which provide Instant travel(But they didn't make these in Modern Times). The Koopa Kingdom is a sort of Mideival-Fantasy, with a Hint of SteamPunk(AirShips, Tanks, etc.)! But in recent times Bowser used Robots, which appear to have been made by either Bowser Jr. or Iggy Koopa(My money's on Iggy), as they are shown to be the most Tech-Savvy. Sarasa Land's is probably similar to MK's only replacing the English Style for a more Oriental one. But it should be noted that the Gairds at Princess Peach's Castle use Spears and Shields.

Well, Iggy built the Robots in Yoshi's Safari, but Bowser Jr. pilots them in SMG/2. My guess is Iggy made them for Bowser Jr., though.

I think Iggy only has to construct one robot, then it is tested, and if it works then Kamek use his magic to make many copies of it... While the two robots used by Jr. could be made by Iggy too, after all he's the one who made all those robots in Yoshi's Safari.

I didn't mean he physically Manufactured them, Iggy just designed them. I'd Imagine the koopa Troop built them on an Assembly Line.
