Yeah, me too, although according to Super Mario Wiki, the "P" in "P-Wing" stands for Paratroopa, which does make a whole lot of sense.
I still think it stands for "Power" in the P-Switch's case, though.

Yeah, that one is tricky. Doesn't really seem to be Paratroopa or Power... and what does the P bar mean anyways!

I never really thought of that but yeah it probably just means Power on all the P-related items.
