I pose some simple questions
Do you think there is more than one Peach's Castle?
If so, do you think there is more than one Toad Town?
Is toad town from Paper Mario a different town to galaxy 1 or 2>

Why would Toad Town from the RPGs be a different place than Toad Town in SMG 1&2 ? oO
And, well, I don't know about Peach's Castle. Its appearances in Mario Kart are probably just recreations to make the background look better (hell, you can drive through it in Mario Kart 3DS). And in the games, its appearance never varries too much. But Toad Town is supposed to be on the seaside. If it's shown to be more inland in the next Paper Mario, then I may have a theory that Toad Town has been moved twice because Bowser's Castle was too nearby, and Peach's Castle would've been moved along. Following that theory, Seaside Town from SMRPG would be now the new Toad Town (as Shooting Star Summit is right next to it) and Toad Town would've been moved yet again, this time at the north of Shiver Town, before Paper Mario 3DS. If you're confused, look at the trailer for that game, there's what seems to be the game's world map in the opening book, and Peach's Castle and Toad Town may be seen.

Different games call for different views. I think we've always been seeing the same Castle snd the same Town, just from a different perspective.

Peach's Castle presumably get's raided by Bowser and his goons a lot. Presumably it had to be renovated over the years, so that's one explanation for why it seems to look different every game.
Same goes for Toad Town.

It's been shown to have been completely destroyed at least 3 times in both Galaxies and in ML2. So I guess that explains why it always looks different.
I personally always liked the Paper Mario version the best.

Same goes for Toad Town. But in SMG2 two different designs (not exactly for the castle, but for its surroudings) are seen. Also, Peach's Castle stayed the same after SMG, as seen in the Grand Finale Galaxy level. In Paper Mario, we learnt it only got a new coat of painting after it went back to the ground. In SMG2, the castle's not even attacked. Etc. |

There is only one Toad Town just like there is only one London. Same applies with Peach's castle.
