Actually harder and more interesting to fight? I mean, the Galaxy 2 ones and those in NSMB Wii are going in the right direction, but we never get stuff this complicated:

It's not like it'd be too hard for Nintendo... a hacker alone even remade the entire Marx fight from Kirby Super Star:
Even something less like the DS New Super Mario Bros lame excuse for a final boss and more like this would be more interesting:
Nintendo needs to make some bosses for 2D (and 3D games) that just feel 'epic' again. If hackers can make all the above ALONE, then how come a team can't do better than a giant Goomba that just runs around, or Petey:
Why not have some massively epic screen filling boss? Heck, Wario Land 4 and Shake Dimension had nice bosses, as did Yoshi's Island and Donkey Kong Country, so why do we get stuck with generic giant mooks in the main games?

Well, I don't want every boss to be epicly hard to beat, but I wouldn't mind some more interesting ones. Like the second part of NSMW's Bowser fight used for a regular boss. Something like that could even make a Giant Goomba interesting!

Let's see, I'd say the hardest Mario boss would be...something from the RPGs (except super paper mario) Hardest platformer boss...er....I found Navel Piranha pretty tricky....
Your right most Mario platformer bosses are really easy. I guess it's so young children aren't completely frustrated by the games.

They don't want to alienate the average person nor the new kids picking up Mario for the first time. If they did, Mario would turn into several other "niche" video game series.

They don't have to alienate them though, and if they did, many of the harder levels have already had that effect (see, NSMB world 8 tower 2, 8-8, NSMB Wii 8-4, 8-5, 9-7, Tubular in Super Mario World, SMB 3 world 8 airship fleet).
Even having the final boss and whatever secret boss hard would be cool, since Grandmaster Galaxy and the secret levels in the Yoshi's Island games indicate Nintendo have no problem with ultra hard secret stuff.

Nintendo is capable of making hard bosses (at least two of those hacked levels were inspired by Nintendo bosses). But in Mario games, they like to make the levels hard and then the boss at a sort of medium level of hardness. It would be nice to have an epicly hard boss fight though

What matters is the level. The boss is more like a checkpoint and a little change of pace than anything else. There could very well be no bosses at all.

It really wouldn't be a Mario game without a boss fight. It would be a Mario game if you just make a random enemy strong and make you fight them. Figures

Truth be told, giant mooks make lame boss fights. The best bosses are those which have some interesting characteristics other than 'massive Goomba' or 'normal enemy with a crown'. King Boo and Petey, however much you hate the latter, are interesting, because they have attacks and personality that just a giant Boo or Piranha Plant wouldn't. The world/dome bosses in the Galaxy games are often awesome because they're unique foes, and not just 'twenty foot tall minion powered up with magic'. Even the best Yoshi's Island foes are those which either make an unlikely enemy, or end up having a unique boss battle and attack pattern.

I liked the Bowser boss battles in Galaxy 1 and the Bowser Jr. ones in Galaxy 2 were awesome

^I liked those battles as well. I still can't tell which Bowser Jr minion/creature fights were best though, Gobblegut, Megahammer and the Boomsday Machine were all awesome.

I don't know about Gobblegut though. It was probably the fact that his level took about 30 seconds to get to him, but I thought he was too easy.

I fought Fire Gobblegut (in Battle Belt SMG2), he was actually a pretty good challenge. I died enough times to make Rosalina show up (which only happened to me one other time). And that's when I remembered something....There was a luma right there the whole time that I could have been buying life-shrooms from >.<
So I finally buy this life-shroom and I ended up not even needing it, not dropping below 4hp and finishing the fight with all 6. All you really need to fight it is a bit of strategy in knowing where to run and when to attack. With regular Gobblegut you can pretty much just run around aimlessly and still succeed with little trouble.

You know what boss fight was unfair?
Bowser Jr.'s Airship Armada in SMG1.
I mean, if you were skilled enough, I'm sure it'd be pretty easy, but with all that crap flying around, it's like it's specifically designed to psych you out so that you do end up dying.

Oh, you know I just remembered a really tough platfromer battle: Bowser Jr's boomsday machine in SMG2. Staying alive is fairly easy, but it took me a ridiculous amount of tries to get to the top and do a successful ground pound.
